Ingredients
- 1 tablespoon olive oil
- 1 link Andouille sausage, sliced into coins
- 1 package (8 ounces) shrimp with garlic herb butter
- Kernels cut from 1 ear of fresh sweet corn
- ½ small red onion, diced
- 1 teaspoon chopped garlic
- Pinch of red pepper flakes
- Splash of dry white wine
- 1 pouch microwave basmati rice
- Fresh basil leaves, torn or chopped
- Kosher salt and freshly ground black pepper, to taste
Instructions
Step 1 – Brown the Sausage
Heat the olive oil in an 8 to 10-inch sauté pan over medium-high heat until it begins to shimmer.
Add the sliced Andouille sausage and diced red onion.
Cook for 2–3 minutes, allowing the sausage to brown while the onions become translucent.
Step 2 – Build the Flavor
Add the chopped garlic and cook for about 30 seconds.
Add the shrimp and cook for another 2–3 minutes.
Pour in a splash of white wine and cook until the wine has mostly evaporated.
Add the garlic herb butter from the shrimp package.
Cover the pan and cook until the shrimp are fully cooked and bright orange.
Step 3 – Finish the Rice Bowl
Prepare the basmati rice according to the package directions.
Place the cooked rice into serving bowls.
Spoon the shrimp, sausage, corn, and garlic herb butter mixture over the rice.
Finish with fresh basil and season with kosher salt and freshly ground black pepper if needed.
Serve immediately.
