Healing Pantry: Rotisserie Chicken Noodle Soup

Some days you don’t need a complicated dish — you just need warmth.
Healing Pantry is all about that kind of food. This soup starts with something almost everyone knows: a Costco rotisserie chicken. Cheap, tender, reliable, and full of flavor. You shred it, build a pot with the trinity, herbs, lemon, and slow noodles, and suddenly the whole house smells like comfort.

Totally optional — sometimes I warm one in the broth and set it on top for serving because it just feels like home. But the soup itself stays simple, healing, and easy to make on a busy night.

Ingredients

Soup Base

  • Meat from 1 Costco rotisserie chicken, shredded
  • (Optional) 1 chicken drumstick for serving
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 ribs celery, sliced
  • 2 medium carrots, sliced
  • 2–3 cloves garlic, minced
  • 8 cups chicken broth (homemade or boxed)
  • 1 bay leaf
  • 1 tsp fresh thyme leaves or ½ tsp dried
  • Salt and black pepper, to taste

Noodles

  • 2 cups wide egg noodles
    (or your preferred noodle)

Finishing

  • Juice of ½ lemon
  • Chopped parsley
  • Cracked black pepper

Bread

  • Sourdough slices
  • Olive oil
  • Coarse salt

Instructions

1. Build the Base

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrot.
  3. Sauté 5–7 minutes until softened.
  4. Add minced garlic and cook 1 minute more.

2. Add Broth & Seasonings

  1. Pour in chicken broth.
  2. Add bay leaf and thyme.
  3. Bring to a gentle simmer.

3. Add the Chicken

  1. Shred most of the rotisserie chicken and add it to the pot.
  2. Leave a drumstick whole if you want to use it for presentation.
  3. Simmer 10–15 minutes to deepen the flavor.

4. Add the Noodles (Updated Section)

  1. Add your pasta of choice directly into the simmering broth.
    Use whatever you have — egg noodles, cavatappi, rotini, penne, or any shape you enjoy.
  2. Stir occasionally so the pasta doesn’t stick to the bottom.
  3. Cook until tender.
  4. Taste the broth and adjust salt and pepper as needed.

5. Finish

  1. Add lemon juice to brighten the broth.
  2. Stir in chopped parsley.
  3. Remove the bay leaf.

6. Toast the Bread

  1. Place sourdough slices under the broiler until golden.
  2. Drizzle with olive oil.
  3. Sprinkle with coarse salt.

7. Serve

  1. Ladle soup into bowls.
  2. (Optional) Warm the drumstick in the broth and place on top for rustic presentation.
  3. Add cracked black pepper.
  4. Serve with toasted sourdough.
