Red Beans and Rice (Slow, Simple, Done Right)

Introduction

Comfort food isn’t about nostalgia—it’s about what you need right now.

This is one of those dishes. Built from simple ingredients, cooked low and slow, and meant to feed people right. No shortcuts. Just time, patience, and execution.


Ingredients

  • 2 cups red beans, washed and picked through
  • 5 oz guanciale (smoked pork jowl), medium dice
  • ½ medium yellow onion, small dice
  • 1 stalk celery, small dice
  • ½ medium green bell pepper, small dice
  • 2 cloves garlic, chopped
  • 48 oz low-sodium chicken stock
  • Salt and black pepper, to taste
  • Old Bay seasoning, to taste
  • 1 teaspoon gumbo filé (added at the end)

For serving:

  • Cooked white rice
  • Chopped scallions

Method

  1. Render the Guanciale
    Start with a cold pan over low heat. Add the guanciale and slowly render the fat, like cooking bacon. Let it crisp up, about 10–12 minutes.
  2. Build the Base
    Add the onion, celery, green pepper, and garlic. Sauté until the onions are translucent, about 3–5 minutes.
  3. Add the Beans
    Stir in the red beans and let them sauté for a few minutes to take on the flavor.
  4. Add Liquid & Simmer
    Pour in the chicken stock and bring to a boil. Cover, reduce heat to low, and let it cook low and slow for 2½ to 3 hours.
  5. Stir & Develop Texture
    Stir every 30 minutes. As the beans cook, they will naturally thicken the liquid.
  6. Finish the Dish
    Season with salt, pepper, and Old Bay to taste. Add 1 teaspoon gumbo filé at the end and stir to finish.

Chef Notes

  • Start cold when rendering the guanciale—this is where your flavor begins.
  • Don’t rush the simmer. The texture comes from time, not shortcuts.
  • If needed, lightly mash a few beans toward the end to help thicken the sauce.
  • This dish should be creamy, not watery.

Serving

Place white rice in a bowl or on a plate. Spoon a generous portion of red beans over the top.

Finish with chopped scallions.

Optional: add a dash of hot sauce for heat and balance.
