The Scotch egg has always fascinated me. At its core, it’s simple — a boiled egg wrapped in seasoned meat, breaded, and cooked until crisp. But like a lot of classic dishes, it travels well. Every kitchen it passes through leaves a fingerprint.

This version leans into that idea. A perfectly cooked egg, surrounded by savory sausage, finished with a sharp mustard sauce and a crumble of blue cheese for contrast. Rich, salty, creamy, and just a little indulgent — the kind of bite that makes you slow down and pay attention.

While Scotch eggs are rooted in British food culture, they fit naturally into a broader global table. Eggs show up everywhere for a reason. They’re affordable, nourishing, and endlessly adaptable.

Scotch Egg with Spicy Brown Mustard & Blue Cheese

Ingredients

For the Scotch Eggs

  • 4 large eggs
  • 12–16 oz Italian sausage (mild or spicy) or sage breakfast sausage
  • ½ cup all-purpose flour
  • 1 cup breadcrumbs or panko
  • 1–2 eggs, beaten (for breading)
  • Black pepper
  • Neutral oil, for frying (or bake if preferred)

For the Mustard Sauce

  • ¼ cup spicy brown mustard
  • 2–3 tbsp mayonnaise or crème fraîche
  • Splash of lemon juice or vinegar
  • Black pepper, to taste

To Finish

  • Blue cheese, frozen
  • Fresh herbs (optional)

Method

  1. Boil the eggs
    Bring a pot of water to a gentle boil. Add eggs and cook 6–7 minutes for jammy centers, or 8–9 minutes for fully set. Transfer to ice water, peel carefully, and set aside.
  2. Prepare the sausage
    Remove sausage from casings if needed. Season lightly with black pepper.
  3. Wrap the eggs
    Divide sausage into equal portions and flatten thin. Wrap each egg evenly — not thick — so the sausage cooks through without overcooking the egg. Seal completely.
  4. Bread the eggs
    Dredge each wrapped egg in flour, then beaten egg, then breadcrumbs.
  5. Cook
    Fry in 350°F oil until golden and cooked through, about 5–6 minutes, turning as needed.
    Optional: Bake at 400°F until browned and cooked through, about 20–25 minutes.
  6. Make the mustard sauce
    Stir spicy brown mustard, mayo (or crème fraîche), lemon juice, and black pepper until smooth.
  7. Plate and finish
    Spoon the mustard sauce onto the bottom of the plate, not over the eggs. Slice Scotch eggs in half and set on top. Shave frozen blue cheese over the eggs to create a light blue cheese snow. Finish with herbs if desired.

Keeping the sausage layer thin is key — it ensures even cooking and better balance. Mild, spicy Italian, or sage breakfast sausage all work; choose based on the flavor profile you want. Freezing the blue cheese makes it easy to shave and adds a clean, sharp finish without overpowering the dish.
